Strawberry Chia Pudding

Serves 4 serves

Ingredients

  • 400ml coconut milk
  • 250g fresh strawberries washed and hulled
  • 4 tablespoons black chia seeds
  • 2 teaspoons stevia

Instructions

  • Puree coconut milk and strawberries ina blender. 
  • Pour into a bowl. Add chia seeds and stevia.
  • Whisk well to separate the seeds and combine. 
  • Cover with cling wrap and refrigerate until set, at least 3 to 4 hours.
  • Stir a couple of times within the first hour to break up any clumps of chia seeds and again just before you are ready to serve. 

Recipe Notes

This pudding is best when fresh, but leftovers will keep covered in the fridge for 2 to 3 days.
