Pumpkin and Lentil Curry - Thermo Version

Serves 4

Ingredients

  • 2 tablespoons (40g) red curry paste
  • 1 can (400g) coconut milk
  • 250 grams pumpkin, peeled and sliced
  • 1 can (400g) brown lentils, washed and drained
  • 12 snow peas, sliced
  • 1/2 cup fresh coriander

Instructions

  • Place curry paste and quarter of the coconut milk into the thermo bowl.
  • Heat for 2 minutes, 60C, speed 1
  • Add remaining coconut milk, pumpkin and lentils
  • Cook for 15 minutes, 100C, speed 1
  • With 6 minutes remaining, remove MC and add snow peas. Replace MC.
  • In the last minute of cooking, remove MC and add the coriander

Recipe Notes

Serving Suggestions: Steamed jasmine rice with fresh coriander and sliced red chillies or spring onions for colour and crunch
