Pork & Apple Bake

Serves 4 portions


  • 175 grams pork tenderloin or boneless loin chop
  • 1 potato
  • 1 parsnip
  • 1/4 onion
  • 1 Granny Smith apple
  • 1 cup water
  • 2 fresh sage leaves


  • Preheat the oven to 180°C.
  • Rinse the pork and chop into small pieces.
  • Peel and chop the potato, parsnip and onion.
  • Peel, core and chop the apple.
  • Place in a casserole dish with the water and sage.
  • Cover and bake for 1 1/4 hours or until nice and tender.
  • Blend or mash to the required consistency.

The flavour of the apple brings out the best of the meat.
