Polenta Lasagne

Serves 8 people

Ingredients

  • 1 1/2 cups polenta
  • 3 zucchinis grated
  • 690 gram jar tomato and herb pasta sauce
  • 150 gram reduced-fat mozzarella cheese grated

Instructions

  • Preheat the oven to 180°C.
  • In a saucepan, bring 1 litre of water to a boil.
  • Gradually add the polenta and stir frequently until thick. Remove and allow to cool for 5 minutes.
  • Divide the polenta roughly into thirds, using the first third, line the bottom of a 30cm square baking dish.
  • Cover the polenta with one-third pasta sauce, zucchini and cheese, season.
  • Continue for another three layers, ensuring the last layer is mozzarella.
  • Bake until the cheese is golden, about 30 minutes.

Polenta is Maize Meal, and ‘Maize’ is the American Indian word for corn. It means ‘that which sustains life’. It is right behind wheat and rice as the most important grain in the world. In addition, it is low GI and is one of the best foods to supply long-lasting energy. This dish is amazing served with a crispy green salad as the “star of the show” or as a side with grilled chicken breast or BBQ lamb.
