Mini Patty Cakes

Serves 24 cupcakes


  • 2 tablespoons butter
  • 4 tablespoons caster sugar
  • 2 drops vanilla extract
  • 1 egg
  • 1 cup self-raising flour
  • 2 tablespoons breast milk or formula


  • Preheat the oven to 180°C.
  • Line two 12-cup mini muffin pans with paper cups.
  • With an electric mixer, cream together the butter and sugar until light and fluffy.
  • Add the vanilla and egg and continue beating until well combined.
  • Add the flour alternately with a drizzle of milk, mixing thoroughly.
  • Spoon the mixture into the cups.
  • Bake for 12 to 15 minutes or until done.
  • Cool in the pan. Lovely served plain or iced.

Recipe Notes

To test if any cake is done, take a skewer and insert it into the centre of the cake. If it comes out clean, the cake is cooked through.
