Ginger & Sweet Potato Soup

Serves 4 servings


  • 2cm piece ginger peeled and finely chopped
  • 1kg sweet potato peeled and cut into chunks
  • 1 tablespoon brown sugar
  • 1 litre Vegetable stock


  • Place the ingredients in the slow cooker.
  • Cover and cook on LOW for 4 hours or high for 2 hours.
  • Cool for 10 minutes.
  • Using a stick blender, blend until smooth.
  • Season to taste before serving.
