Dinosaur Eggs

Serves 40 balls


  • 2 1/2 cps desiccated coconut or shredded to roll
  • 400 grams dried apricots finely chopped
  • 400g can condensed milk


  • Measure out 1/2 cup coconut and set aside on a wide, flat plate.
  • Place the remaining coconut in a bowl and stir int he apricots and condensed milk.
  • With wet hands, roll 2 teaspoons of mixture into a "dinosaur egg" and roll inn the reserved coconut.
  • Refrigerate or freeze for a later date.
