Date Loaf

Ingredients

  • 375g packet dates
  • 2 teaspoons instant coffee
  • 1 cup GF self-raising flour
  • 1/4 cup flaked almonds

Instructions

  • Preheat oven to 160°C.
  • Add coffee to 1 cup of boiling water and mix.
  • Pour over dates and soak overnight.
  • Stir in GF flour.
  • Pour mixture into a baking paper lined loaf tin, sprinkle with flaked almonds and bake for 45 minutes.

Recipe Notes

Optional: serve warm with lashings of butter.

    This recipe is awesome. So easy. I’m done my own tweak and add chopped walnut instead of almond. Also add 1/2 cup of wheat bran and 1/4 more cup of water. So easy so delicious!
