Coconut Pikelets

Serves 14 pikelets

Ingredients

  • 400ml coconut milk
  • 2 cups self raising flour
  • 1 tablespoon honey or agave nectar
  • 2 eggs

Instructions

  • Combine all ingredients with ½cup (125ml) water, and gently whisk until smooth.
  • Pour a small amount of mixture into a hot, nonstick frying pan and cook over moderate heat until bubbles appear.
  • Flip and cook until lightly browned.
  • Repeat in batches until all the batter is used. 

Recipe Notes

Optional: Serve drizzled with delicious Caramel Sauce, the combination of coconut and caramel just screams ‘DELICIOSO!’.  Add grated apple and cinnamon to the batter before cooking.

    One of the most satisfying things EVER!!! I made them and the part we were pouring the coconut milk on the flour… it just slid! It is also a good example of weathering
