Cheese & Bacon Cob Loaf

Serves 8 people

Ingredients

  • 1 cob loaf
  • 250 grams rindless bacon chopped
  • 1 onion peeled and quartered
  • 1 tablespoon butter
  • 250 grams cream cheese
  • 300 grams cream
  • 2 cups grated mozzarella
  • 1 cup grated cheddar cheese
  • 1 cup English Spinach chopped

Instructions

  • Cut the top off the cob loaf and pull the soft bread out. Preheat oven 180°C. Place the top and stuffing aside.
  • Into the thermo bowl, place bacon and onion (5 seconds, speed 5)
  • Scrape down the sides and add butter (4 minutes, 100°C, speed 1)
  • Add cream cheese, cream and grated cheeses. Season with cracked pepper (6 minutes, 100°C, speed 1).
  • Half way through, remove MC and add spinach.
  • Fill the cob with the mixture. Place bread lid on and wrap in foil.
  • Bake for 45 minutes.
  • Remove foil, add bread pieces and bake for another 10 minutes, or until nice and crisp.
  • To serve, place on a heat resistant platter with crispy bread pieces around the outside to use as dippers.
