Carrot & Coriander Soup

Serves 4 Servings


  • 1.5 Litres Vegetable stock
  • 2 large onions chopped
  • 10 stems fresh coriander stems included
  • 8 large carrots roughly chopped


  • In a large saucepan, heat the stock.
  • Add all other ingredients and bring to a gentle boil.
  • Reduce the heat and simmer until the carrots are tender.
  • Season with cracked pepper before blending.
