Blue Ribbon Chicken

Serves 2 serves


  • 2 chicken breast halves skinless, boneless
  • 2 slices Swiss cheese
  • 2 slices ham
  • ½ cup seasoned breadcrumbs


  • Preheat oven to 180°C.
  • Line a 20 x 30cm baking tray with baking paper.
  • Pound chicken breasts to 1cm thickness.
  • Season both sides with sea salt and cracked pepper.
  • Lay one slice of cheese and ham atop each fleshy breast.
  • Roll chicken, tucking in ends and secure with a toothpick.
  • Place on prepared baking tray and smother with breadcrumbs.
  • Bake for 30 to 35 minutes or until cooked.
  • Remove toothpicks, slice and serve immediately.

Recipe Notes

Homemade Breadcrumbs: Butter wholemeal bread, fold, grate, season with sea salt, cracked pepper and a pinch of paprika.
