Optional: Anything can be added to the basic mix to give variety, such as; smarties, cornflakes, sultanas, finely diced apple, cinnamon, choc chips etc. For a healthier version, use half wholemeal flour. NB: Mixture will freeze. Roll into balls, and place in container layering with non-stick paper. Thaw slightly before cooking.
First batch laced with zest from home grown lemons. Second back included a dollop of lemon curd in the top of thicker biscuits. Third lot had almond meal and essence added. Found I needed to add flour to my hands when kneeling as the dough was quite sticky.
I love this recipe, i swap part of the flour out for custard powder, creates a different flavour. this is a no fuss base and works every time.
