Banana Bread

Serves 8 people


  • 2 large Bananas (really ripe)
  • 1/2 cup caster sugar
  • 1 cup Whole egg mayonnaise
  • 2 cups self-raising flour


  • Preheat oven to 180C
  • Line a 23 x 13 cm loaf tin with baking paper
  • In a medium bowl, mash the bananas
  • Stir in the sugar
  • Add the mayonnaise, flour and a pinch of sea salt and lightly mix, just until combined
  • Using a spatula, scrape the mixture into the tin and bake until a skewer inserted into the center comes out clean, 45 minutes
  • Let cool in the pan for 10 minutes, then turn onto a rack
  • Enjoy it warm straight away or lightly grilled

Recipe Notes

Optional: Before baking sprinkle with ground spices, eg. cinnamon and nutmeg. In addition to adding flavour, spices also add health benefits too.

    Love this recipe. No fuss, quick and easy.
    Sometimes have sub caster sugar for brown sugar, tastes just as great. Will also throw in pecan or walnuts in as well.
    Freezer well. Worth making and saving the recipe.

    Great simple recipe. Sometimes I add blueberries or raspberries, too. If you feel the Mayo makes it a bit heavy try swapping a third to half a cup of the mayo for plain yoghurt or buttermilk.
