Banana Bread

Ingredients

Bananas
(really ripe)
1/2
cup
caster sugar
1
cup
Whole egg mayonnaise
2
cups
self-raising flour
Instructions
Preheat oven to 180C
Line a 23 x 13 cm loaf tin with baking paper
In a medium bowl, mash the bananas
Stir in the sugar
Add the mayonnaise, flour and a pinch of sea salt and lightly mix, just until combined
Using a spatula, scrape the mixture into the tin and bake until a skewer inserted into the center comes out clean, 45 minutes
Let cool in the pan for 10 minutes, then turn onto a rack
Enjoy it warm straight away or lightly grilled
Recipe Notes
Optional: Before baking sprinkle with ground spices, eg. cinnamon and nutmeg. In addition to adding flavour, spices also add health benefits too.
