Baked Ravioli

Serves 4 serves

Ingredients

  • 400g spinach & ricotta (or pumpkin) ravioli
  • 2 zucchinis grated
  • 500g pasta sauce
  • 1 cup Parmesan cheese grated

Instructions

  • Preheat oven to 180ÂșC.
  • In a pot of salted, boiling water, cook the ravioli until it floats, 4-5 minutes.
  • Drain well.
  • Meanwhile, grate zucchini, squeezing to rid of extra liquid.
  • In a large bowl mix together zucchini, pasta sauce and three-quarters of the cheese.
  • Into a casserole dish, add a layer of ravioli and cover with a layer of pasta sauce.
  • Repeat layering process finishing with a layer of Parmesan cheese.
  • Season with sea salt and cracked pepper.
  • Bake for 15 minutes or until cheese is melted and golden brown.
  • Sit for 5 minutes before cutting into squares as you would lasagne.

Recipe Notes

Optional: Serve with fresh garden salad, homemade potato chips or warm, crunchy garlic bread.
