Measure out ½ cup coconut and side aside on a wide, flat plate.
Place the remaining coconut in a bowl and stir in the apricots and condensed milk.
With wet hands, roll 2 teaspoons of mixture into a 'Apricot Bomb' and roll into the reserved coconut.
Refrigerate or freeze for a later date.
