Apricot Bombs

Serves 40 bombs


  • cups desiccated coconut or shredded to roll
  • 400g dried apricots finely chopped
  • 400g can condensed milk


  • Measure out ½ cup coconut and side aside on a wide, flat plate.
  • Place the remaining coconut in a bowl and stir in the apricots and condensed milk.
  • With wet hands, roll 2 teaspoons of mixture into a 'Apricot Bomb' and roll into the reserved coconut.
  • Refrigerate or freeze for a later date.
