All-Natural Caramel Truffles

Serves 15 truffles


  • 1/2 cup pine nuts
  • 10 Medjool dates pitted
  • 1/2 teaspoon vanilla extract
  • 1/4 cup desiccated coconut


  • Add pine nuts to a food processor and grind until fine.
  • Add the dates and vanilla and process until the mixture is well combined.
  • Place the coconut onto a flat plate.
  • Roll a teaspoon of mixture into a ball, and then roll in coconut.
  • Continue until all the mixture is rolled.
  • Store in an airtight container in the fridge for up to two weeks.
