40-Calorie Cup of Soup

Serves 4 serves


  • 3 large zucchinis halved
  • 3 tablespoons chives chopped
  • 3 cups Vegetable stock
  • 1 tablespoon lemon juice


  • Season zucchinis, then roast in a 180C oven for 10 minutes; then slice.
  • Slice zucchinis into thirds.
  • Add zucchinis, chives, lemon juice and zest and stock to the blender.
  • Set blender to ‘VELOUTE’ (fine soup function).
  • Press START.
  • Come back when it’s all Done.
  • MAGIC!
