10-Second Coconut Bread

Serves 8 servings

Ingredients

  • 1 cup self-raising flour
  • 2/3 cup desiccated coconut
  • 1/2 cup sugar
  • 270ml can coconut milk shaken

Instructions

  • Preheat the oven to 180°C. Line a 27 x 11cm loaf tin with baking paper.
  • Pop all ingredients into the thermo bowl ( 10 seconds, speed 7)
  • Once the batter is combined, pour it into the prepared tin, using the spatula to remove remaining batter and bake for 40 minutes or until golden and firm to touch.
  • Remove from the oven and allow to cool on a wire rack.
  • Serve dusted with a little icing sugar or the delicious Rosewater Buttercream on p. 234 of ThermoStruck.

Recipe Notes

Optional: Throw in ½cup blueberries when mixing the other ingredients together, the combination of blueberries and coconut is just heavenly.
