Stacked Chicken With Mushroom
  • 4 large field mushrooms (140g each)
  • 4 skinless chicken breasts  (150g each)
  • 4 cherry tomatoes (17g each)
  • 4 tablespoons basil pesto (80g each)
  1. Preheat the oven to 180°C/360F.
  2. Place chicken and mushrooms in a baking pan, season with herbal vegetable salt and cracked pepper. Roast for 15 minutes. Add tomatoes and roast for another 5 minutes.
  3. In a small microwaveable dish, warm the pesto for 30 seconds, stirring to distribute the heat.
  4. To serve, place the mushrooms; 1 per plate. Top with chicken, 1 tablespoon pesto, and a roasted tomato.
Recipe Notes

Optional: Add extra cherry tomatoes at just 3 calories per serve + 2 steamed broccolini for 35 calories drizzled with lemon juice and seasoned to serve.
