- 300 mL cold thickened cream
- 1-2 Limes zest only
- 6 meringue nests crushed
- 500 grams strawberries washed, hulled and sliced
- Whip the cream until it stands in stiff peaks, 4 minutes.
- Fold the zest of the lime into the cream.
- Add the crushed meringue nests and most of the strawberries, then fold it all together. Spoon into 6 small or one large bowl.
- Garnish with remaining strawberries and a little extra lime zest.
