Ingredients
  • 2 large Bananas (really ripe)
  • 1/2 cup caster sugar
  • 1 cup Whole egg mayonnaise
  • 2 cups self-raising flour
Instructions
  1. Preheat oven to 180C
  2. Line a 23 x 13 cm loaf tin with baking paper
  3. In a medium bowl, mash the bananas
  4. Stir in the sugar
  5. Add the mayonnaise, flour and a pinch of sea salt and lightly mix, just until combined
  6. Using a spatula, scrape the mixture into the tin and bake until a skewer inserted into the center comes out clean, 45 minutes
  7. Let cool in the pan for 10 minutes, then turn onto a rack
  8. Enjoy it warm straight away or lightly grilled
