- 1/2 cup pine nuts
- 10 Medjool dates pitted
- 1/2 teaspoon vanilla extract
- 1/4 cup desiccated coconut
- Add pine nuts to a food processor and grind until fine.
- Add the dates and vanilla and process until the mixture is well combined.
- Place the coconut onto a flat plate.
- Roll a teaspoon of mixture into a ball, and then roll in coconut.
- Continue until all the mixture is rolled.
- Store in an airtight container in the fridge for up to two weeks.
