Tuna & Tomato Risotto
Serves 4.
- 400g can flaked tuna in brine, drained
- 400g can chopped tomatoes
- 2 cups (370g) arborio rice
- 5 cups seafood or vegetable stock
Bring stock to boil, add rice and reduce heat and simmer for 20 minutes Add tuna and tomatoes, season to taste. Continue to simmer, stirring regularly, until all liquid has absorbed. Then serve.
