Feta & Leek Omelette
Serves 2 and is a delicious breakfast.
- 1 tbs. butter
- 1 leek, washed and thinly sliced
- 4 eggs, beaten
- 100g feta, crumbled
Heat butter in a frying pan, toss in leek and stir fry for 3 – 4 minutes or until soft, careful not to burn. Pour in eggs and season with sea salt and pepper, cook over medium heat for 5 minutes or until the eggs are no longer runny. Sprinkle with feta, fold in half, allow feta to warm before cutting in wedges to serve.
