Feta & Leek Omelette

Feta & Leek Omelette

Serves 2 and is a delicious breakfast.

  • 1 tbs. butter
  • 1 leek, washed and thinly sliced
  • 4 eggs, beaten
  • 100g feta, crumbled

Heat butter in a frying pan, toss in leek and stir fry for 3 – 4 minutes or until soft, careful not to burn. Pour in eggs and season with sea salt and pepper, cook over medium heat for 5 minutes or until the eggs are no longer runny. Sprinkle with feta, fold in half, allow feta to warm before cutting in wedges to serve.

Hi Gals, Just a quick email, to let you know that I think your book is just fabulous. I am a single mum, and I can tell you with a 3year old daughter who has allergies to egg and berries, I have found your book to be a source of sensational ideas.

She was the hit of the day care the other day with a sandwich cut into the shape of a gingerbread man.
