Easy Salmon Rissoles

 

Serves 4 

  • 400g can pink salmon
  • 1/2 cup (130ml) whole-egg mayonnaise
  • 1 cup mashed potato
  • 1 cup crushed Ritz crackers, crushed

Preheat oven 120C. Mix all ingredients together and season with pepper. Shape into cakes and bake for 20 minutes or until golden.

U have one hell of a book there and I just cant wait for my mum to get one sent to her in UK for her to bring out with her to Zim when she visits in Jan - well done to u guys for being so wonderfully creative!
