Easy Salmon Rissoles

 
Serves 4 

  • 400g can pink salmon
  • 1/2 cup (130ml) whole-egg mayonnaise
  • 1 cup mashed potato
  • 1 cup crushed Ritz crackers, crushed

Preheat oven 120C. Mix all ingredients together and season with pepper. Shape into cakes and bake for 20 minutes or until golden.

I just wanted to thank you for the great kitchen range you released via Kmart - I wish I could afford more pieces, but I bought the set of 4 when it first came out.

I was skeptical about them at first, but I LOVE them. And the colour is fantastic (racy red, my favourite!) Please keep up the great work and recipes - I love it as with just me and my son and a toddler, cooking can be a challenge to do quickly and easily!
