Creamy Pesto Chicken Pasta
SERVES 4
- 400g / 16 oz. spaghetti
- 300g / 10.5 oz. chicken breast, cut into bite-size pieces
- 1 1/4 cups heavy cream
- 1/4 cup basil pesto
In a pot of salted, boiling water, cook the spaghetti until al dente. In a large nonstick frying pan, brown the chicken. Add the cream and pesto and simmer for 5 minutes. Add the spaghetti and toss well. Serve warm.
Optional: Sprinkle with Parmesan cheese to serve.
