Creamy Pesto Chicken Pasta

 
SERVES 4

  • 400g / 16 oz. spaghetti
  • 300g / 10.5 oz. chicken breast, cut into bite-size pieces
  • 1 1/4 cups heavy cream
  • 1/4 cup basil pesto

In a pot of salted, boiling water, cook the spaghetti until al dente. In a large nonstick frying pan, brown the chicken. Add the cream and pesto and simmer for 5 minutes. Add the spaghetti and toss well. Serve warm.
Optional: Sprinkle with Parmesan cheese to serve.
This is a real crowd pleaser!

Nov 09 - "Good morning, I'll be honest I've had books 1 & 2 since last Christmas and have picked them up with all good intention of using them BUT never did!

That was until 2 nights ago when I made the simple beef strog!!!! YUM YUM YUM My sister poppped in half way thru tea and had a taste..."OMG thats good and its better than mums...but don't you dare tell her!" was her response!
