Coconut & Pea Soup
Serves 4
- 2 x 420g coconut milk
- 500g green peas
- 2 spring onions, sliced
- 1 tsp. finely grated ginger
In a large saucepan sauté onions and ginger in a little water until tender. Add Cans of coconut milk and bring to a boil. Stir in the peas and bring to the boil again. Remove from heart, puree in a blender until smooth. Season to taste. Add more fresh ginger to the soup if desired.
