Caramelised Bananas

Caramelised Bananas

Serves 8

  • 4 tbs. (60g) butter
  • ¾ cup (165g) brown sugar
  • 4 bananas, thickly sliced on the diagonal
  • 16 pancakes

Place the butter and sugar in a small, non-stick frying pan. Over a medium heat stir to dissolve. Add bananas, reduce heat and cook for 3 minutes or until the bananas have caramelised in the sauce. Heat the pancakes in the microwave for 30 seconds, stack onto a serving plate and top with the scrumptious toffee bananas.

Thanx a million for a cookbook that amazes me everytime I open it. I purchased it after seeing you at Brookside. I can't believe how many recipes you have put together that use as little as 4 ingredients that are usually in my pantry but I have no idea how to put them together.

I'm not saying I am a hopeless cook but I tend to do more complicated recipes that take more time. I now have much more time for my 3 kids at 'witching hour'.
