Easy Everyday Vanilla Slice

Gazing upon your empty plate with satisfaction, a perfect vanilla slice should leave you basking in the glory of it's wonder, with a lingering memory of the audible gasp, the look of disbelief surpriseapplause even!

So how about a little slice slice baby?..............Vanilla Slice, Slice Baby!blush

Our humble Vanilla Slice, known as AUSTRALIA'S SLICE OF PERFECTION because of it's simplicity, flavour & pure E.A.S.E!


* 1 pkt cream crackers (lattice biscuits)
* 600ml double/thickened cream (1 Pint)
* 50g (2 ounces) pkt vanilla pudding mix

Place a layer of crackers on the bottom of a paper lined rectangular baking dish. Mix cream and pudding together until thick, pour onto biscuit base and top with another layer of biscuits. Refrigerate for at least 30 minutes before slicing and serving.

Optional: When in season, add two fresh mangoes peeled and sliced to the mixture topped with the "icing" of your choice. Passionfruit Icing is used for this particular "photo".

Tip: We have found the Cottee's vanilla pudding mix to work extremely well, and the chocolate pudding mix works if you want to try a chocolate version. If you for some reason cannot find lattice biscuits or cream crackers in your part of the world, par bake 2 sheets of puff pastry for 5-8 minutes in a moderate oven instead. Allow to cool completely before using in this recipe. Or if you live anywhere that sells SAO biscuits, this works fine too.

Stop, deliberate and listen, ice this slice and watch it glisten!


* 3 Tablespoons Icing sugar (confectionary sugar)
* 1 Tablespoon Margarine
* 1 Passionfruit


Mix altogether. If the icing is too runny just add a little more icing sugar until it is the consistency you prefer.
